Live cooking/grilling stations have become the stars of the fine dining show, gathering guests and diners to the heat of the moment. It could be the smell of aromatic smoke in the air, the sizzle of a prime cut of meat on a hot grill, or the simple delight of standing around an open flame as a grill master works their magic, turning dinner into a show. The art of barbecue may have long been associated with casual weekends and backyard cookouts, but it has slowly and steadily earned a position in the world of elevated gastronomy. Even as gastronomy itself evolves, its most powerful attribute remains constant: few things bring people together quite like good food shared with good company.
Whisky shares a similar history. Traditionally considered something to be consumed before or after a meal, it is well-known for the ritual of the pour, a high-quality glass, pleasant company, and the time taken savouring each sip. Premium whisky is now becoming an integral part of the culinary experience. Chefs and mixologists are discovering new ways to employ whisky’s depth and complexity, ranging from marinades, glazes, and dessert sauces to well-orchestrated pairings and cocktails inspired by distinct flavour profiles. The result is a more intentional dining experience in which food and whisky combine to create flavours that neither could achieve alone.

The incredible variety of notes that whisky brings to the table contributes to its growing popularity in kitchens and bars globally. Depending on the expression, a whisky can contain layers of orchard fruits, honey, vanilla, caramel, spice, nuts, or oak, each of which opens up new culinary possibilities; in the hands of a good chef or bartender, those flavours can become another layer in the dish or drink.

Yet, elevated gastronomy is no longer about the contents on a plate, but about making memorable experiences that appeal to all the senses. Food lovers today are willing to travel near and far in search of culinary experiences that combine exceptional food with craftsmanship, storytelling, and a strong sense of place. From a chef-led supper club, a destination dining experience or an intimate live-fire feast, the emphasis has shifted from simply eating a meal to truly experiencing it.
When it comes to grilling, Kenyans do not need much persuasion to indulge, as this is a loved and familiar concept in the region; what is changing is the way we experience it. The culinary world is growing increasingly keen to elevate traditional foods with higher-quality ingredients, sophisticated techniques, thoughtful pairings, and ambiances that enhance the occasion, turning familiar flavours and traditions into experiences that feel both deeply rooted and refreshingly new. The result, of course, has been a comforting novelty for diners.
The essence of premium fine dining was on display over the weekend when the BBQ Bandits, a duo of Kenyan grill masters who are revolutionising the grilling game, brought their craft to Kasa Pombo, a new luxury hospitality destination in Shimoni, Kwale County, for Moto wa Bahari, an elevated barbeque dining experience. The experience provided the guests who travelled in from all over the country a weekend of the sun, sea, slow pace of the Kenyan Coast, and smoked and flame-grilled seafood and meats. The Singleton played a complementary role throughout the experience, with the18-Year-Old expression taking center stage for guests to sip and savour, while other variants, 12 and 15 Years, were featured in signature cocktails and by the BBQ Bandits, who infused select sauces and accompaniments with the single malt, adding another layer of depth and flavour to the menu. Guests also got to relish sunset cruises, dolphin sighting, and a hearty brunch, all while enjoying a two nights’ stay at Kasa Pombo. It was a testimony of elevated dining, premium whisky and a fine establishment coming together to create a weekend guests would always cherish.
It is undeniable that gastronomy has evolved in response to a wider shift in people’s attitudes about what is authentic, quality-made, and worth remembering. Whether it’s a thoughtfully prepared meal, a beautiful setting, or the opportunity to gather around a table with good company, the most memorable experiences are often the simplest. They encourage us to savour the moment and appreciate the craftsmanship and attention that goes into every detail, creating memories that will remain long after the event is over.
